I’m always on the look out for something new and exciting in the way of an appetizer.  I mean, isn’t it true that after a while we all get bored of the same old, same old?  You know, life goes on … even after the thrill of eating is gone … or something like that!

Well, you never know where the great recipes are going to come from, and I have a friend who consistently puts up recipe after recipe on her Facebook page, and not only are they original and different, but they’re healthy too!  She’s also a pretty nice lady, and her name is Megan Brewer!

Well, attached is a recipe for an appetizer that is absolutely delicious and easy peasy to make which is totally my style!  I’m calling it Megan’s Food Art because it plates really well and adds a great splash of colour to your table.  They used to say that if you chose your vegetables in all colours of the rainbow at each meal, you would know that you were getting a good selection of nutrition.  I think.  Maybe I made that up.  I don’t know.  Memory fails.

At any rate, and without further adieu, here’s the recipe for Megan’s Food Art!

Ingredients

12-16 phyllo cups

hummus

chopped tomatoes

chopped peppers

feta cheese

parsley

balsamic vinegar

Arrange phyllo cups in a square on the plate and fill them with hummus to cover the bottom.  Combine the chopped tomatoes and peppers and feta cheese and fill the cups to overflowing.  Sprinkle parsley on the top and drizzle with balsamic vinegar.
